牡蛎是我国南方主要养殖贝类,营养丰富、药用价值高,其所含的牡蛎肽具有抵抗机体氧化、延缓衰老等作用,但牡蛎浓郁的腥味阻碍了其在化妆品、食品中的应用。文章采用基于铝基金属有机框架(MOFs)材料的吸附脱腥技术,以间苯二甲酸和十八水硫酸铝为原料制备了CAU-10-H材料,通过粉末X射线衍射(PXRD)、孔隙结构表征、热重分析等手段研究其结构性质,运用气相色谱-质谱联用(GC-MS)、吸附等温线测试等方法对比其与商用活性炭对牡蛎肽中腥味物质的脱除效果。经CAU-10-H材料吸附处理后,牡蛎肽中的主要腥味物质苯乙烯、5-氨基-1-甲基-1H-吡唑-4-甲酰胺等被完全脱除。在298 K、0.09 kPa条件下,CAU-10-H和活性炭对典型恶臭味蒸汽苯乙烯的吸附量分别为129 mg/g和69 mg/g,表明相较于活性炭,CAU-10-H对苯乙烯的吸附性能更好。
Abstract:As a predominant cultured shellfish species in southern China, oysters are nutritionally rich and highly valued for medicinal properties. Oyster-derived peptides exhibit antioxidant properties and anti-aging effects, yet their applications in cosmetics and food industries are hindered by their pungent fishy odor. This study employs an adsorption-based deodorization technology utilizing an aluminum-based metal-organic framework(Al-MOF). CAU-10-H was synthesized using terephthalic acid and aluminum sulfate octadecahydrate as precursors. Comprehensive characterization techniques, including powder X-ray diffraction(PXRD), pore texture analysis, and thermogravimetric analysis(TGA), were employed to investigate its structural and physicochemical properties. Comparative evaluations of deodorization efficacy between CAU-10-H and commercial activated carbon were conducted via gas chromatography-mass spectrometry(GC-MS) and adsorption isotherm measurements targeting fishy odorants in oyster peptides. Results demonstrate complete removal of primary fishy odorants-styrene and 5-amino-1-methyl-1H-pyrazole-4-carboxamide from oyster peptides after CAU-10-H treatment. At 298 K and 0.09 kPa, the adsorption capacities of CAU-10-H and activated carbon for styrene(a representative malodorous compound) reached 129 and 69 mg/g, respectively. These results indicates that CAU-10-H shows better adsorption performance for styrene than activated carbon. This study highlights the potential of Al-MOFs as advanced adsorbents for efficient deodorization of bioactive marine-derived peptides.
